This year I have definitely rediscovered my love for baking. Well, once we were able to buy flour again. At this point the flour shortage seems a thing of the past though. In the City our kitchen is unfortunately a little small, but at least it is good enough for making some delicious cake. Even more though I love the big kitchen in the homestead in Maine. There is bakeware from the last ca. 50 years, two ovens, plus I, being on vacation, have plenty of time. Actually, now that I come to think of it, there is at least one more oven in another kitchen in this house. Only I haven’t used it yet. Anyways, I have spent the last few days baking many different cakes.
When Rich mentioned the other day that he felt like a little sweet snack, but we didn’t even have a bar of chocolate (I really don’t know what we thought when we went grocery shopping for our stay and ignored the chocolate shelf in the supermarket), I quickly made these browned butter white chocolate chip blondies. It turned out to be the perfect sweet dessert for us. The browned butter adds a flavorful, almost smoky taste. The white chocolate chips are there for a bit of extra sweetness. I used three small pans instead of a bigger one to save on baking time.
The blondies were a little too much for just the two of us, esp. because I also baked other tasty things. But we (or the blondies) were lucky that Rich’s family came back to join us here in Maine for the rest of the week. So I get to feed five more people, meaning I get to make even more cake. Because what would a lovely, chilly fall day be without a sweet pie or pastry or … still hot from the oven?!
