Recipe: Blueberry basil pancakes

Das Wochenende ist gerade vorbei, aber das nächste kommt bald. Im Moment ist für mich sowieso jeder Tag wie Wochenende. Die Ferien sind definitiv einer der großen Vorteile am Lehrerdasein, und solange ich nicht einen reichen Mann heirate und Hausfrau mit Putzfrau, Koch und schwarzer Amex werde – wonach es im Moment leider nicht aussieht – genieße ich also die langen Sommerferien. Vor allem fürs Frühstück nehme ich mir immer ausgiebig Zeit und schiebe am Morgen schon mal eine Avocado mit Ei in den Backofen oder backe Eierkuchen (oder Pfannkuchen oder wie auch immer, ihr wisst, was ich meine).

Blaubeereierkuchen stehen bei mir gerade ganz hoch im Kurs, weil Blaubeeren einfach unglaublich lecker sind und es hier überall große Kartons mit den frischen Beeren zu kaufen gibt. Die USA müssen irgendwo unglaublich viele Blaubeersträucher verstecken. Meine Blaubeereierkuchen mache ich so:

Zutaten für vier Portionen

1 EL Zitronensaft
500 g Mehl
2 EL Zucker
2 1/2 TL Backpulver
etwas getrocknetes Basilikum (Menge je nach Geschmack)[/typography]

1 großes Ei
1 EL geschmolzene Butter
etwas Öl
Blaubeeren[/typography][/twocol_one_last]

So geht’s

[typography font=”Underdog” size=”14″ size_format=”px” color=”#000000″]1. Gebt das Mehl, den Zucker, das Backpulver, das Salz und Basilikum in eine große Schüssel und verrührt es.[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#000000″]2. Gebt die Milch mit dem Zitronensaft, dem Ei und der Butter in eine andere Schüssel und verrührt ebenfalls alles, bevor ihr diese Mischung in die andere Schüssel gießt.[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#000000″]3. Verrührt alles, bis es gerade nicht mehr klumpig ist.[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#000000″]4. Erhitzt Öl in einer Bratpfanne und gebt kleine Teigportionen in die Pfanne. Streut nun erst ein paar Blaubeeren darauf. Wenn der Eierkuchen nach ein paar Minuten auf der einen Seite braun ist, dreht ihn um.  Wiederholt diesen Punkt :-)[/typography]

Ich mische gerne etwas Hüttenkäse mit Blaubeeren als Aufstrich für die Eierkuchen, weil ich es morgens noch nicht so süß mag, aber Honig, Sirup oder Marmelade eignen sich garantiert genausogut. Übrigens verbacke ich oft nur die Hälfte des Teiges zu Blaubeereierkuchen und gebe die andere Hälfte auf ein kleines, tiefes Blech, das ich in den Backofen schiebe. Was ich mit dem großen Eierkuchen dann mache, zeige ich euch das nächste Mal.

Recipe: Blueberry basil pancakes

The weekend is only gone, but the next is coming up soon. At the time every day feels like weekend for me. Vacation is definitely one of the great upsides of being a teacher. And as long as I don’t marry a rich man and become a housewife with a cleaner, a chef and a black Amex – it unfortunately doesn’t look like that right now – I enjoy my long summer break. I especially make a lot of time for my breakfast and sometimes even put an avocado with an egg into the oven or make pancakes.

I really like blueberry pancakes at the moment because blueberries are just really delicious, and you can buy big cartons of these fresh berries everywhere. The US must have a huge amount of blueberry bushes somewhere. This is how I make my blueberry pancakes:

Ingredients for four portions

1 tbs. lemon juice
500 g flour
2 tbs. sugar
2 1/2 tsp. baking powder
some dried basil (amount depending on your taste)[/typography]

1 large egg
1 tbs. melted butter
some oil
blueberries[/typography][/twocol_one_last]

Instruction

[typography font=”Underdog” size=”14″ size_format=”px” color=”#808080″]1. Put the flour, sugar, baking powder, salt and basil into a big bowl and stir them.[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#808080″]2. Put the milk together with the lemon juice, the egg and the butter into another bowl and whisk before you pour this mix into the first bowl..[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#808080″]3. Mix everything until the dough is only just not lumpy anymore.[/typography]

[typography font=”Underdog” size=”14″ size_format=”px” color=”#808080″]4. Heat a bit of oil in a frying pan and put little portions of dough into the pan. Sprinkle only now some blueberries on top of them. Once the pancake is golden brown on the one side after a few minutes, flip it. Repeat this with the rest of the dough :-)[/typography]

I like to mix a bit of cottage cheese with blueberries as a topping for the pancakes because in the morning I don’t like eating something too sweet. But honey, sirup or jam work just as well of course. By the way, I usually only use up half of the dough for blueberry pancakes, and pour the other half into a small, deep baking tray which I put into the oven. I’ll show you next time what I do with this big pancake.
