romain lettuce

sweet potatoes

goat cheese
2
eggs
roasted pumpkin seeds
lemon basil vinaigrette
e.g. from Gotham Greens
Instructions
Boil the eggs until they are hard boiled.
Peel the sweet potatoes. Cut them into cubes. Boil those for about 7 minutes or until they are soft.
Cut the romain lettuce into small pieces and put it into a big bowl.
Peel and dice the avocado. Add it to the lettuce.
Cut the goat cheese into smaller pieces and add it.
Drain the sweet potato cubes and add them.
Peel the eggs. Slice them. Add them.
Add the pumpkin seeds.
Mix everything thorougly.
When serving, add the vinaigrette.
