Recipe: Vegan Swiss Chard Lentil Soup

Ingredients
  

  • 2 tbsp. olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 2 parsley roots chopped
  • 1 big bunch Swiss chard cut into ribbons
  • 1 big red tomato diced
  • 2 tbsp. tomato paste
  • 200 g or 1 cup dried red lentils
  • 1.75 l or 8 cups vegetable broth
  • 1 package vegan sausages 400 g
  • salt pepper

Instructions
 

  • Prepare all the vegetables.
  • Heat the oil in a big pot.
  • Sauté the onion, carrots and parsley roots for a few minutes.
  • Add the Swiss chard and the tomato. Sauté shortly.
  • Mix in the tomato paste, the red lentils and the vegetable broth.
  • Let simmer for about 20 minutes.
  • Add a bit more broth if necessary.
  • Slice up the sausages and add them to the soup.
  • Add salt and pepper to taste.
