Recipe: Couscous with sweet potatoes and brussel sprouts

Manchmal bekomme ich aus den komischsten Gründen Heißhunger auf bestimmte Sachen. Eigentlich muss ich nur kurz über türkisches Essen reden und schon will ich İçli Köfte (Klöße aus Bulgur und Hackfleisch). Ich müsste nur endlich mal lernen, sie selbst zu machen, denn ich rede ziemlich oft über türkisches Essen. Oder über Weihnachten habe ich Lindsey Kelks neusten Roman “A girl’s best friend” gelesen, in dem die Protagonistin an einer Stelle sagt: “Imagine Hawaii at Christmas. Wouldn’t that be amazing? I wonder if they still have Chrstimas trees. Shit, what if they don’t have brussel sprouts? I hate them, obviously, but you’ve got to have them.” Und seitdem hatte ich so ein Hüngerchen nach Rosenkohl.

Sometimes I feel a craving for certain foods for the weirdest reasons. I might just talk about Turkish food for a second, then I immediately want içli köfte (dumplings made of bulgur and minced meat). I should really learn to make them myself because I tend to talk a lot about Turkish food. Or another example: over Christmas I read Lindsey Kelk’s latest novel “A girl’s best friend”, in which the main character says at one point: “Imagine Hawaii at Christmas. Wouldn’t that be amazing? I wonder if they still have Chrstimas trees. Shit, what if they don’t have brussel sprouts? I hate them, obviously, but you’ve got to have them.” Ever since I had the munchies for brussel sprouts.

Recipe: Couscous with sweet potatoes and brussel sprouts

Da passt es gut, dass wir fast jeden Freitagnachmittag direkt von der Arbeit zum Wochenmarkt am Haymarket in Boston fahren, wo es günstiges Obst und Gemüse gibt, was im normalen Supermarkt ein Vermögen kostet. Oft finde ich sogar saisonale Angebote dort. Im Herbst gab es sogar ein- oder zweimal Quitten, obwohl die hier sind niemand zu kennen, geschweige denn zu essen scheint. Und am letzten Freitag hatte ich Glück und konnte auf dem Markt Rosenkohl kaufen. Nun ist Rosenkohl alleine vielleicht ein bisschen langweilig, weshalb ich ihn nicht gekocht, sondern in eine Pfanne gemeinsam mit Süßkartoffeln und Couscous gegeben habe. Ich glaube, dass hat ihm auch gefallen. Mir auf jeden Fall.

It is good that every Friday afternoon we go from work directly to the weekly market at Haymarket in Boston. There fruits and vegetables are much cheaper than in a normal supermarket. I often find many seasonal offers there, too. In fall they even had quinces once or twice, even though nobody seems to know, let alone eat them here. And last Friday I was lucky and bought brussel sprouts on the market. Brussel sprouts alone may be a little boring, which is why I didn’t simply boil it, but made them become a stir-fry together with couscous and sweet potatoes. I think the brussel sprouts liked that as well. I did in any case.

Recipe: Couscous with sweet potatoes and brussel sprouts

Zutaten für etwa 4 Personen:

  • 130 g Couscous
  • 1/2 Zwiebel
  • 2 Knoblauchzehen
  • Öl
  • Gemüsebrühe
  • 300 g Rosenkohl
  • 300 g Süßkartoffeln
  • Pinienkerne
  • etwas Muskatnuss
  1. Kocht den Couscous je nach Packungsanleitung in einem Topf.
  2. Würfelt gleichzeitig die halbe Zwiebel und die zwei Knoblauchzehen und bratet sie in etwas Öl in einer großen Pfanne an.
  3. Gebt den geputzten und halbierten Rosenkohl sowie die geschälten und gewürfelten Süßkartoffeln hinzu. Bratet alles an.
  4. Fügt etwa 150 ml Wasser hinzu sowie Gemüsebrühe (entweder als Pulver oder Würfel) und wartet, bis der Rosenkohl und die Süßkartoffeln weich sind.
  5. Nun kommen der Couscous und Pinienkerne nach Wunsch in die Pfanne. Reibt etwas Muskatnuss darüber.

Recipe: Couscous with sweet potatoes and brussel sprouts

Ingredients for ca. 4 portions:

  • 130 g couscous
  • 1/2 onion
  • 2 garlic cloves
  • oil
  • vegetable broth
  • 300 g brussel sprouts
  • 300 g sweet potatoes
  • pine nuts
  • a little nutmeg
  1. Prepare the couscous accordings to the instructions printed on its packaging in a pot.
  2. Cut the onion and the cloves of garlic into small cubes, and start frying it gently in a big pan, together with a bit of oil.
  3. Add the brussel sprouts and sweet potatoes which you cleaned and cut into halves before.
  4. Add ca. 150 ml water as well as the vegetable broth (either the powder or the cube; or take 150 ml of ready-made vegetable broth and no water). Let it all boil slightly until the brussel sprouts and the sweet potatoes are soft.
  5. Now pour the couscous into the pan, and add pine nuts according to taste. Grate a bit of nutmeg on top of it.

  1. Mhh, ich liebe Couscous, aber esse es viel zu selten, weil ich da immer nicht weiß, was ich machen soll. Das sieht so lecker aus! das werde ich mal nachmachen 🙂
