Recipe: Vegan beetroot soup

Was ich schon immer gerne gegessen habe, ist Rote Bete und zwar in allen Formen. Also roh im Salat, sauer eingelegt und gekocht am liebsten im Borschtsch, den meine Mutter jedes Jahr im Winter gekocht hat. Für mich ist Rote Bete so ein richtiges Wintergemüse, das besonders in Suppenform wärmt und dabei mit seiner kräftig roten Farbe nicht so traurig aussieht wie die meisten anderen Gemüsesorten, die man in der kalten Jahreszeit kaufen kann. Es kommt auch durchaus vor, dass ich abends einfach in der Küche stehe und mit der Gabel mehr oder weniger elegant eingelegte Stückchen Rote Beete aus dem Glas fische, während ich hoffe, dass meine Mitbewohnerin mich nicht dabei sieht, und der Kater versucht, herauszufinden, ob da nicht auch etwas für ihn Leckeres im Glas steckt. Zum Glück habe ich mich selbst noch nicht dabei mit dem roten Saft bespritzt. Der ist nämlich extrem hartnäckig, was ich auch an meinen Händen erkennen konnte, nachdem ich die Knollen für die Suppe hier geschält und klein geschnitten hatte. Ich finde aber, dass die Suppe die roten Hände absolut wert ist, denn sie schmeckt unglaublich gut und erfüllt gleichzeitig ihre Aufgabe, mich in diesen Wochen zu wärmen.

What I have always liked to eat is beetroot in all kinds of form. Raw in salads, pickled, and cooked which my favorite of is the borscht my mother cooked every winter. For me beetroot is a real kind of winter vegetable which warms me up esp. when eaten as a soup. At the same time because of its bright red it doesn’t look as sad as most of the other types of vegetables one can buy in winter. It also happens that in the evening I just stand in the kitchen and use a fork to fish more or less gracefully pickled pieces of beetroot out of a glass while I hope that my roommate won’t see me doing so, and the cat tries to find out if there is anything in the glass he might like to eat. Fortunately, I haven’t yet spattered myself with the red liquid. That is actually extremely resistant, which I also noticed on my hands after I had peeled and cut the beetroots for my soup here. But I also think that the soup is absolutely worth those red tinted hands because it is very delicious, and it also fulfills the task to warm me up these days.

Recipe: Vegan beetroot soup

Zutaten für etwa 4 Portionen

  • 1 halbe Zwiebel
  • 400 g Rote Bete
  • 150 g Kartoffeln
  • 1 Stück Ingwer
  • Pflanzenöl
  • 600 ml Gemüsebrühe
  • 100 ml Kokosmilch
  • Salz, Pfeffer
  1. Würfelt die Zwiebel und ein kleines Stück Ingwer. Lasst dann etwas Öl in einem großen Topf heiß werden und schmort beide darin glasig.
  2. Schält die Rote Beete sowie die Kartoffeln und schneidet beide in kleinere Stücken. Gebt diese auch in den Topf und fügt die Gemüsebrühe hinzu.
  3. Lasst es köcheln, bis das Gemüse richtig weich ist und fast von alleine zerfällt.
  4. Fügt die Kokosmilch hinzu.
  5. Püriert die Suppe oder nehmt wie ich einen Kartoffelstampfer und zermatscht sie. Ich mag es, wenn noch ein paar kleine bissfeste Stücken in der Suppe sind.
  6. Salzt und Pfeffert die Suppe nach Belieben.

Recipe: Vegan beetroot soup

Ingredients for ca. 4 portions

  • 1/2 onion
  • 400 g beetroot
  • 150 g potatoes
  • 1 piece of ginger
  • vegetable oil
  • 600 ml vegetable broth
  • 100 ml coconut milk
  • salt, pepper
  1. Cut the onion and a small piece of ginger into cubes. Heat up some oil in a big pot and cook both ingredients in it.
  2. Peel the beetroot as well as the potatoes, and cut them into smaller pieces. Put them into the pot, too, and add the broth.
  3. Let it simmer until the vegetables are very soft and almost fall apart.
  4. Add the coconut milk.
  5. Blend the soup or use a potato masher to mash it like I do. I like when there are still some small pieces firm to bite in the soup.
  6. Season with salt and pepper to taste.

  1. Rote Beete finde ich total lecker, aber als Suppe absolut uuuunnngeeeniießbar 😀 haha Ich weiß auch nicht warum, aber bei Roter Beete in Suppenform schüttelt es mich 😉

  2. Ich habe Rote Bete erst recht spät für mich entdeckt. Früher mochte ich die Knollen nämlich überhaupt nicht, weil mich meine Eltern immer gezwungen haben, es zu essen. Heute mag ichs aber echt gern und merk mir dein Rezept gerne – für die nächste Suppe! 🙂
