Recipe: Healthy red winter salad

Wie ihr sicher längst mitbekommen habt, denke ich nicht immer unbedingt mit, wenn ich einkaufen gehe. Gerade nach einem Besuch auf dem Markt kann es passieren, dass ich drei Gurken, zwei Pfund Rosenkohl und drei Mangos habe. Ich mag zwar die einzelnen Sachen immer sehr gerne, aber habe noch nicht so richtig geschafft, so zu planen, dass ich mehr kombinieren kann. Der nächste Versuch kommt schon übermorgen … vielleicht macht Übung ja doch noch den Meister.

Jedenfalls kam es so, dass sich im Kühlschrank mehrere rote Beeteknollen und ein Rotkohl befanden. Alles Rot ist an sich schön und die kräftige Farbe macht mir im Winter gute Laune. Ich habe schnell herausgefunden, dass man beide Zutaten roh essen kann und damit war mein schneller und gesunder Salat schon fast fertig:

As you have probably noticed, I don’t always think enough when I go shopping. Especially after a visit to the market, I may end up with three cucumbers, two pounds of brussel sprouts, and three mangos. Even though I like all those foods alone, I haven’t really managed to plan so that I can combine more of them. I will try next on the day after tomorrow … maybe skill really comes with practice one day.

Anyway, this is how I found several beetroots and a red cabbage in my fridge. I find all this red pretty, and the bright color makes me happy especially in winter. I was quick at learning that both ingredients can be eaten raw, and thus I prepared a healthy salad:

Für 1 Portion (nehmt einfach mehr Gemüse für mehr Portionen)

  1. Würfelt die Hälfte einer kleinen roten Zwiebel.
  2. Schneidet Rotkohl nach Belieben klein.
  3. Reibt rote Beete nach Belieben.
  4. Gebt das Gemüse in eine Schüssel und mischt es.
  5. Rührt für das Dressing etwa 1 EL Olivenöl, 1 EL Balsamicoessig und 1 TL Honig zusammen. Salzt und pfeffert es.
  6. Gebt das Dressing über den Salat und fügt Pinienkerne hinzu.

For 1 portion (just take bigger amounts of the vegetables for more portions)

  1. Cube one half of a small red onion.
  2. Chip the red cabbage to taste.
  3. Grate the beetroot to taste.
  4. Put all the vegetables into one bowl, and mix them.
  5. For the dressing mix 1 tbs. olive oil, 1 tbs. balsamic vinegar and 1 tsp. honey. Add salt and pepper.
  6. Pour the dressing over the salad. Add pine nuts.
